Today we are sharing Butterscotch Cornflake Cookies! Fair warning these are addictive! I tried to each just one and walk away but well I failed miserably. I had to have a 2nd one. I just couldn't say no.

- Butterscotch chips
- Creamy peanut butter
- Corn flakes

Don't be surprised if cornflakes fly out of the pan while you are stirring them into the melted butterscotch and peanut butter mixture. As you can see in the video they did the same thing to me.
I like to prep my cookie sheets with parchment paper and have them ready before I start to melt the butterscotch chips and peanut butter together. That way I know that I am prepared and ready to go. The parchment-lined baking sheets make it really easy to create this cornflake cookie recipe.
You can make these as big or small as you like them. I like to use two regular spoons to scoop them and help remove them from the spoon. They form into bite-size cornflake cookies. You can also use a cookie scoop if you want more consistent sizes.
I don't add chocolate chips to my recipe because I love the pure butterscotch peanut butter flavor. If you want to you can easily add in a half a cup of chocolate chips.
You can also add in chopped nuts if you want more crunch. I would bump up the number of butterscotch chips and peanut butter to help hold the nuts.
If you have kids helping you I suggest putting the corn flakes in a large bowl and pouring the melted butterscotch and peanut mixture over them. This gives kids the chance to stir them together without having to be near the hot pan.
If you do not want to make these on the stovetop you can melt the peanut butter and butterscotch chips together in the microwave. You will want to do an initial 30-second interval and then 15-seconds making sure to stir after every interval.
If you don't have cornflakes on hand or want to try a different version you can also make these with oatmeal or Rice Krispies. They would also be good with Cocoa Krispies or whatever fun cereal you have that matches the flavors.
Any type of nut butter can be used instead of peanut butter. Natural Nut Butter may not melt the same as creamy peanut butter causing the cookies to not stick as well.
I store these at room temperature in an airtight container. You can also store these in the refrigerator but make sure they are room temperature before serving them.
If you want to make these into holiday cornflake cookies you can scoop them into a large muffin pan. Use the end of a wooden spoon to form a circle in the middle so they form a wreath. Top them with red hots or other candies to make them look like a holiday wreath. You can also add in green food dye if you want them to look even more like a Christmas wreath.

- ยผ Cup Creamy Peanut Butter
- 3 ยฝ Cups Corn Flakes
Instructions
- Melt butterscotch chips over low heat, add peanut butter, stir in corn flake cereal
- Drop by spoonful onto parchment paper
