I love this time of year! The excuse to use Guinness in as many recipes as I possibly can before St. Patrick's Day.
While I know I could make them year-round I just seem to find the time between Valentine's Day and St. Patrick's Day is prime Guinness recipe time.
Today's Slow Cooker Crock Pot Guinness Irish Beef Stew Recipe is the perfect comfort food for a chilly winter night.
Not only do you get to enjoy Guinness in your stew you also get the comforting mix of carrots, potatoes, and beef mixed in. Hello yum!
This recipe is absolutely delicious! You don't have to stress about hours stirring the pot or making sure that the bottom of the pot is not burning.
The slow cooker does all the work! With a five hour cook time you can set this up in the morning and dinner is ready when you get home.

This would pair fantastically with this traditional Irish Soda bread! Perfect for soaking up every last drop.
You can also serve this with mashed potatoes on the side. This Guinness Stew has a great rich flavor.
Ingredients needed to make Guinness Stew
- Beef cubes
- Beef Broth/stock
- Guinness Stout Beer
- Potatoes
- Carrots
- Onion
- Tomato Paste
- Garlic
- Thyme
- Kosher Salt
- Pepper
Optional - celery, bay leaves, fresh parsley, rosemary, thyme sprigs, and/or bacon
Ingredients to make a Slurry
- Cornstarch
- Water
Flour mixture for the beef:
- Flour
- Seasoning salt
- Garlic powder
- Black Pepper
If you can't find Guinness you can use any other stout beers that you find at the store. I just find the Guinness Extra Stout Beef is the easiest stout to find and it adds the depth of flavor that we love. .
Beef - We use chuck roast but you can also use round roast, short ribs, sirloin, or brisket. Lamb can replace beef to make a more traditional Irish Stew.
Vegetables - We use carrots, onion, and potatoes in this recipe but you can definitely add in celery if desired.
Broth - We use beef broth but this can be exchanged for chicken stock.
Cornstarch - You can exchange the cornstarch for all purpose flour if desired.
Equipment needed
Skillet - To brown the beef before placing in the slow cooker
Tongs - Make sure you have long enough tongs that you don't hit your arm on the hot skillet. Trust me it does not feel great
Slow cooker - You can use a slow cooker that has the option to brown the beef and then slow cook if you have one. This is a great way to save time having to wash another pan.

Slow Cooker Crock Pot Guinness Stew Recipe
Ingredients
- 1 lb Beef cubes
- 4 c Beef Broth
- ยฝ c Guinness Draught Stout Beer
- 2 Potatoes cut into bite-sized pieces
- 2 Carrots cut into bite-sized pieces
- ยฝ Onion sliced
- 2 Tablespoon Tomato Paste
- 1 tsp. Garlic minced
- 2 teaspoon Thyme dried or 2 full sprigs, fresh
- 1 ยฝ teaspoon Salt
- 1 teaspoon Black Pepper
Slurry Ingredents
- 1 Tablespoon Cornstarch for slurry
- 1 Tablespoon Water for slurry
Flour mixture for the beef:
- ยผ C All Purpose Flour
- 1 teaspoon Seasoned salt
- ยฝ teaspoon Garlic powder
- ยฝ teaspoon Black Pepper
Instructions
- In a bag, combine everything listed under โflour mixture for beefโ.
- In batches, drop pieces of beef into the bag and shake to coat evenly.
- In a skillet, place the oil and heat. Drop the pieces of beef in and sear them on all sides, being sure not to overcrowd the pan. You may have to do this batches.
- When everything is seared, place the beef into the slow cooker.
- Add the remaining ingredients (except cornstarch and water) and cook on low for 5 โ 6 hours or until the potatoes are cooked through and the beef is tender.
- In the last 30 minutes of cooking, add the slurry of cornstarch, stir, and continue to let cook and thicken.
