I love how quick and easy it is to make this creamy Velveeta queso with hamburger meat. You only need four ingredients and a few minutes to heat everything.
Perfect for game days, holiday parties, potlucks, or any time you want a quick and easy queso dip.
It perfectly combines Rotel tomatoes, green chilies and spices, Velveeta cheese, hamburger, and seasoning. This dip is one of our favorite easy dip recipes.
You can customize this Rotel cheese dip if you want it spicy or mild.
Ingredients Needed

- Rotel Diced Tomatoes and Green Chilies

Serve with tortilla chips, crackers, toasted bread, carrots, celery, pretzels, breadsticks, broccoli, veggies, or any of your favorite dippers.
Ground Beef -ย You can also use ground turkey, ground sausage, chicken, or veggie meal crumbles.
Rotel diced tomatoes and green chilies - Rotel comes in spicy, fire roasted, original, no salt added, or mild. It is up to you which can of Rotel tomatoes you use. If you don't have any Rotel you can sub with salsa.
Optional - To make it even cheesier you can sprinkle cheddar cheese over the top of it. You can make it even creamier by adding in a brick of cream cheese.
Add in chili powder or taco seasoning for extra flavor while cooking the hamburger.
Optional toppings - sour cream, diced jalapenos, chipotle peppers, or avocado, green onions
Equipment Needed
- Large Skillet - Make sure to use a large enough skillet that you easily mix everything together.
- Hamburger Mix n Chop
- Heat resistant potholders - A couple of years ago we had a fire scare when we didn't realize we had turned a burner on and a cloth potholder caught fire. Thankfully we walked by the kitchen and saw the smoke and were able to get it out ourselves. Since then we have only used these heat-resistant potholders.
- Serving Dish - this can be served in a cast-iron skillet or in a serving dish.ย This recipe can be served in a slow cooker to keep it warm for parties.
How to make Velveeta Rotel Dip with Ground Beef
I've included complete instructions in the printable recipe card at the bottom of the post, but here's a quick version.
Step 1 - Brown ground beef over medium heat on the stove top until cooked. Crumble with mix n chop until the hamburger is no longer pink.
If you are adding in taco seasoning or chili powder I suggest adding it in while the ground beef is cooking.
Step 2 - Drain excess grease from the pan. Add in Velveeta, Rotel, and Chili Powder. Stir until smooth and melted.
Do NOT drain the Rotel before adding it to the ground beef!!!!
Step 3 - Serve hot with tortilla chips
Slow Cooker Velveeta Dip Recipe
This dip can come together in a CrockPot. Brown the beef using the stovetop, drain the grease, and then add the hamburger meat into the slow cooker with the Velveeta and Ro-tel.
Turn the slow cooker to low and stir until everything is melted and smooth. Turn the CrockPot to warm before serving.

Vegan Option: In addition to the guidance for vegetarians, vegans should replace Velveeta with a plant-based alternative to make this recipe vegan.

Velveeta Rotel Dip with Ground Beef
Ingredients
- 1 pound Ground Beef
- 8 Ounce Velveeta cheese cubed
- 10 Ounce RO-TEL Diced Tomatoes & Green Chilies
Instructions
- Brown ground beef in a skillet until no longer pink. Drain great from the skillet.
- Add Velveeta and Rotel to the ground beef and stir until smooth.
