Oh, hello, yum! Last week, as we were driving through the snow on our way home from Yellowstone, my brain instantly started thinking about chili, comfort foods, winter foods, and all the goodness I needed to make in the Crock Pot.
What else would you do on an 8-hour drive home but craft new recipes in your head that you can't wait to try? The first recipe I had to share is this Slow Cooker Crockpot White Chicken Chili Recipe!
We have shared a ton of Crock Pot Chicken Recipes and Crock Pot Chili Recipes; somehow, we have not shared a White Chicken Chili Recipe! Gasp! How is that even possible? LOL!
Thankfully, I had 8+ hours in the car to think of the best White Chicken Chili Recipe we could share with you. I knew I wanted to use a rotisserie chicken and Bush's White Chili Beans since I have been seeing them at Walmart and love that they come pre-spiced and full of flavor, and some spices to make it a bit spicy but not too over the top.
The nice thing about making chilis is deciding how much spice and heat you put into the recipe. If you like it mild, you can go down to a few pinches of spice, or if you want your mouth to be on fire and gasping for breath, you can add it by a heaping teaspoon. It is totally up to you.
I am a mild-flavor girl, but my amazing husband is all in on the spices, so I tend to make chilis a bit spicier for him.

Storage: Store leftovers in an airtight container in the refrigerator and enjoy them within four to five days.
Freezing/How to Freeze: Freeze leftovers in an airtight, freezer-safe container or sturdy Ziploc bag and enjoy them within three months. Liquid expands when frozen, so leave some room when you fill the container for freezing.
How to Reheat: Reheat leftovers using your microwave, stovetop, or CrockPot set to low, depending on how many servings you need to prepare. Let frozen White Chicken Chili portions thaw overnight in the fridge to ensure they reheat evenly.

Substitutions: You can replace the sour cream with a cup of plain or Greek yogurt for a healthier version.
To make this creamier you can blend the bean mixture in a blender before adding it to the slow cooker.
Add in corn for a bit of sweetness.
Switch out the White chili beans for cannellini beans, great northern beans, or other white beans just make sure to add in more seasoning.

Smaller Serving Size + Larger Group/More Servings: The written recipe makes six servings and scales readily to your desired yield. Depending on your slow cookerโs capacity, you may need to work in batches if you scale up.
Make It Spicy: Make your White Chicken Chili fiery by increasing the amount of cayenne pepper or diced green chili peppers or adding a few dashes of your favorite hot sauce to taste. We recommend a green hot sauce if you go the hot sauce route.

Ingredients
- 5-6 cups Rotisserie Chicken
- 4 cups Chicken Stock low sodium
- 30 oz Bush's White Chili Beans do not drain
- 4.5 oz Diced Green Chili Peppers
- 3 cloves Garlic minced
- 1 small onion finely diced
- 2 Teaspoon ground cumin
- ยฝ Teaspoon kosher salt
- ยผ Teaspoon Cayenne Pepper
- 1 cup Sour Cream
Optional for topping your chili
- cilantro, jalapenos, non-fat sour cream, plain greek yogurt, shredded cheese, tortilla chips
Instructions
- Cut the chicken into chunky pieces and add to crock pot slow cooker
- Add remaining ingredients and stir together
- Cook on low for 4-6 hours or high for 2-4 hours
- In the final half hour add in a cup of sour cream
