Ham and Cheese Crescent Roll Breakfast Casserole
I am always trying to come up with new things to do with leftover ham. There is nothing wrong with a great ham and cheese omelet but some days you have to up your game a bit.
Enter in this delicious crescent dough baked ham, egg, and cheese baked breakfast goodness. My husband loves this recipe! This is the leftover ham recipe he asks for any time I whip up a ham. This past week I made a honey-baked ham and had some leftover to play with so I made this for him and he devoured it.
The best part is it tastes great the next day! I am able to make one of these up and have it in the fridge for breakfast leftovers which makes starting the day so much easier. You can also change this recipe up and make it a sausage and cheese crescent roll casserole if you prefer sausage over ham.
This is one of our favorite easy breakfasts that takes minutes to prepare.
My husband now drops not-so-subtle hints that he is hoping I will make this for breakfast. I love that his favorite recipe is quick and easy to whip up.
Ingredients
- Refrigerated Crescent Rolls Sheet
- Eggs
- Ham
- Cheddar Cheese
- Salt and pepper
Additional Options - cooked bacon, green or red peppers, onions, mushrooms, sausage, or anything you want to toss in.
Ham - I made a honey-baked ham and used it in this recipe. You could also make a crockpot ham or bourbon baked ham, coke glazed ham, or orange glazed ham.
Cheddar Cheese - Feel free to change this to swiss cheese, Colby jack, or whatever cheese you have available.
Veggies - If you decide to add veggies to your breakfast casserole you will want to cook them in a skillet first. This will help remove any extra moisture from the veggies so your egg casserole does not get watered down.

9 X 13 Baking Dishย - This is the perfect size baking pan for rolling out the crescent dough and having it create a nice base crust.
Knife and Cutting Board - to dice the ham
Measuring cup - if you want to measure out the ham and cheese.

Don't forget to preheat the oven to 375 degrees

Ham and Cheese Crescent Roll Breakfast Casserole
Ingredients
- 1 Crescent Rolls refrigerated
- 6-8 Eggs
- 1 Cup ham diced
- 1.5 Cup Cheddar Cheese shredded
Instructions
- Preheat oven to 375 degrees
- Unroll crescent dough into a 9x13 baking dish. Pinch segments to seal them together. Use a fork to prick all over the dough
- Bake for 7 to 9 minutes until the dough is set
- Pour in beaten eggs on top of the crescent baked dough, top with ham and cheese.
- Bake for 18 to 22 minutes until eggs are set.
