Strawberry Lemonade Cookies Recipe
We recently made freckled lemonade and it reminded me of getting fresh lemonade from lemonade stands in the summer.
I am counting down the days to warm summer days and getting outside more. Until then we are working on fun spring and summer recipes.
Cake mix cookies are one of my favorite easy dessert recipes. You only need three ingredients to make most cake mix cookies. These strawberry lemonade cookies need 4 ingredients but that is because we are using both a strawberry cake mix and a lemon cake mix.
The last time I made these easy cookies a friend stopped by and happened to try them. She asked if I had a ziploc baggie so she could bring some home with her she loved them that much.
Ingredients
- Strawberry Cake Mix
- Lemon Cake Mix
- Butter
- Eggs
Optional Add-ins - Powdered sugar, white chocolate chips, lemon zest
Equipment Needed
2 Large Bowls - You will need two bowls to mix each of the cake mixes in their own bowl
Hand Mixer - This cake mix cookie batter is thick. A hand mixer will make mixing the dough a lot easier.
Cookie Scoop - A cookie scoop will make it really easy to get evenly sized cookies.
Wire rack - a cooling rack is a great way to get the cookies to evenly cool completely
Recipe Tips
This recipe makes double the number of cookies of a regular cake mix cookie recipe since there are two cake mixes used. We were able to make 40 cookies using a cookie scoop to get even cookies.
You can use a cookie scoop to scoop two full scoops of dough and then divide them in half and combine with the other flavor.
Another option is to grab pieces of each dough and roll them together to create a dough ball. Make sure to gently roll the dough together so you don't completely mix them and end up with pink cookies.
If you want to add a simple glaze to these cookies you can whisk together 1 cup powdered sugar with 1-2 tablespoons of milk until combined. Add more milk to thin the glaze if needed. Drizzle over the cookies with a fork for a fun twist.
To make Strawberry Lemonade Crinkle Cookies you can roll the dough balls in powdered sugar before baking them.
For extra lemon flavor, you can add a bit of fresh-squeezed lemon juice to the lemon cookie dough.
For a fun addition you can sprinkle these cookies with fun sprinkles.

Strawberry Lemonade Cookies Recipe
Ingredients
- 15.25 Ounce Strawberry Cake Mix
- 15.25 Ounce Lemon Cake Mix
- 4 Eggs
- 1 cup Butter room temperature
Instructions
- Preheat oven to 350 degrees
- Combine strawberry cake mix, 2 eggs, and 1 stick of butter in a bowl. Mix together, set to the side.
- Combine lemon cake mix, 2 eggs, and 1 stick of butter in a bowl. Mix together
- Scoop 1 part strawberry mix and 1 part lemon mix and roll to make a dough ball
- Place on a parchment lined baking sheet. Bake for 9 minutes.
- Allow cookies to set on the baking sheet for a few minutes.
