Bread - We use plain white sandwichย bread but you could easily use brioche bread, Hawaiian bread, or any soft bread.
Butter - You can use vegan butter to make this vegan.
Sugar - You can cut the sugar in half if you don't want as sweet of a pineapple stuffing.ย You can also use a 50/50 mix of white and brown sugar if you want a more caramel flavor.
Crushed Pineapple - You can add this drained or undrained depending on the texture you want for the stuffing. We normally drain pineapple juice from the crushed pineapple. Chunk pineapple can be used if you want more texture.
Recipeย Variationsย - you can add in toasted sliced almonds on the top if you want a bit of a crunch in your stuffing. A bit of vanilla extract for sweetness.
For additional texture - you can add in โ cup chopped pecans/walnuts. Stir in dried cranberries.

How to make Pineapple Stuffing
I've included complete instructions in the printable recipe card at the bottom of the post, but here's a quick version.
Preheat the oven to 350 degrees!
Step 1 - Add eggs, butter and sugar to a mixing bowl. Using a hand mixer cream them until they are nice and creamy.
Step 2 - Once the butter, eggs and sugar are creamy fold in crushed pineapple and mix. Stir to mix with a spatula or wooden spoon.
Step 3 - Add in bread cubes that are cut in 1 inch squares. Stir together until the bread crumbs are well coated.
Step 4 - Spray casserole baking dish with non-stick spray. Add pineapple casserole mixture and evenly spread in the pan.
Step 5 - Bake until golden brown. Remove from oven and enjoy!
