Mummy Quesadilla
I am all in for Halloween fun this year! After a quiet few years of not really celebrating we are all in for all the Halloween Quesadillas and fun!
This is a great easy Halloween dinner everyone can enjoy before heading out trick or treating.
We are going to work on making pumpkin quesadillas to pair with these mummies. I thought about trying to make a quesadilla spider but I am still figuring out how to make it look amazing.

These quesadillas can be customized with your childโs favorite fillings so even older kids will love this Halloween Food.
Ingredients
This is a quick overview of the simple ingredients that you'll need to make an epic Mummy Quesadilla! Specific measurements and step-by-step instructions are included in the printable recipe card at the bottom of the post.
- Flour Tortilla
- Shredded Cheddar Cheese
- Sliced Olives
- Olive Oil Spray
Optional - chicken, avocado guacamole, black beans, salsa, peppers, and/or your favorite quesadilla fillings.
Equipment Needed
Pizza Wheel Cutter/ Kitchen Scissors/ sharp knife
Baking Sheet - We are huge fans of these baking sheets with sides. You don't have to worry; you will remove the Mummy Quesadillas from the oven and have them slide right off.
Parchment Paper -ย I love that I can use parchment paper to help make clean-up a breeze. You can also spray the pan with vegetable cooking spray.
Heat resistant potholdersย - A couple of years ago we had a fire scare when we didn't realize we had turned a burner on and a cloth potholder caught fire. Thankfully we walked by the kitchen and saw the smoke and were able to get it out ourselves. Since then we have only used these heat-resistant potholders.
How to make Mummy Quesadilla
I've included complete instructions in the printable recipe card at the bottom of the post, but here's a quick version.
Step 1 - Preheat oven, prep ingredients, line a baking sheet with parchment paper.
Step 2 - Place whole tortilla on parchment lined baking sheet, top with shredded cheese.
Step 3 - Cut tortilla strips with a pizza cutter to create mummy strips.
Place strips in a criss-cross pattern across the cheese.
Step 4 - Place olive halves to create eyes. Spray tortillas with olive oil spray if desired.
Step 5 - Bake until golden brown.
Recipe Tips
We bake these Halloween quesadillas but you could easily cook them in the microwave if desired.
We made these Mummy Quesadillas with 6-inch tortillas but you can use larger ones if you have them.

Preparation and Storage
Make Ahead โ We do not suggest making these ahead of time. The quesadillas will not have the same crunch and super melty cheese if they are fully made ahead of time.
Storage โ Store leftovers in an airtight container in the refrigerator. Reheat in the oven at 350 degrees or in the microwave.
Freezing/How to freeze โ We have not tried freezing quesadillas but if you choose to make sure to wrap them individually in plastic wrap and store in a freezer safe container. Thaw in the fridge before reheating.
How to reheat โ Reheat in the microwave or the oven.

Substitutions - This recipe can easily be adapted with different cheese flavors, add in more veggies, a different type of tortilla.
Vegetarian Option - This recipe is vegetarian.
Vegan Option โ Use vegan cheese. Make sure to check the tortilla ingredients.
Gluten Free - Use gluten-free tortillas
Smaller Serving Size โ This recipe can be used to make 1 or 100 Mummy Quesadillas.
Make it Spicy โAdd in a sprinkle of hot sauce, diced jalapenos for eyes, or your favorite spice.

- Bake until golden brown about 5-6 minutes
