This healthy ten-minute side dish is an excellent choice for a Southwestern rib dinner, featuring bold and zesty additions like cilantro and lime juice. For those who eat with their eyes, the corn, garbanzo beans, diced tomatoes, and black beans also create some yummy, appetizing pops of color.
