Can you tell I love my Crock-Pot? I mean what is not to love when you can make Crock Pot Cornbread!
Crock Pot Cornbread
Oh my goodness this is so easy and smells amazing! Some days I think I could set up an entire counter full ofย Crock-Potsย and make our entire meal in them.
John might come home shaking his head if the entire counter was covered in them.
I think it would be great to do an entire meal in crockpots from appetizer to desserts. I would start with this Crock Pot Cornbread, then add in Crock Pot Beef Stroganoff or Corned Beef and then finish the meal with Crock-Pot Caramel Sauce and Apples.
I just love that you can make cornbread in the slow cooker. This is great for holidays or dinner when you need to save space in the oven.
You can set this up and forget it while you prep the rest of dinner. Save yourself some stress and enjoy this recipe.
Ingredients Needed
- Egg
- Sour cream
- Butter
- Jiffy Cornbread mix
- Corn
I used frozen corn that I had in the freezer from this summer. I love being able to use the produce that I froze over the summer when it was fresh.
You can also use canned corn. I tend to add the entire can of corn to this recipe and make it really dense with corn.

Recipe Tips
I like to place strips of parchment paper under the cornbread to make it easier to remove. I still use non-stick spray to keep the parchment paper in place and make the cornbread less likely to stick to the side of the slow cooker.
If you have a known hot spot in your crockpot you can stick a ball of foil in this area to prevent the cornbread dough from touching the side of the slow cooker. I tend to just cut off the dark parts when the cornbread is done cooking. I have a hot spot on one corner of my crockpot that always heats up way hotter than any other part of the slow cooker.
You can use frozen, canned, or fresh corn with this recipe. I put in to add a cup of corn in the ingredients but you can easily double this amount. I tend to throw in an entire can of corn that has been drained. I like the sweet bits of corn within the cornbread.

Crock Pot Cornbread
Ingredients
- 1 egg
- ยฝ Cup Sour Cream
- 1 stick Butter melted
- 2 small Jiffy Cornbread Mix 8.5 oz total
- 1 Cup corn or 2 cans of cream style corn
Instructions
- Spray Crock-Potย with non-stick spray
- Mix all ingredients in a bowl
- Spoon into Crock Pot
- Cook on high for 3 hours and 25 minutes

ok im from va and we also eat cornbread & milk...sweet & buttermilk..
but cornbread and butter is always good hot /cold i can eat hot crusty
cornbread straight out of the oven any day...yum...

Thanks for this great recipe! I prepared this just like the recipe says. (I used the creamed corn.)
Tasted great!!
However, I do have one small correction: The instructions say 2 small Jiffy boxes for a total of 8.5 oz.
Each box of Jiffy mix is 8.5 oz, so you're actually using 17oz of mix. No harm no foul, I figured it out by the picture and a little common sense:7)

Did I miss what size crock pot to use? It sounds good but I don't want to use a 6 qt pot if a 4 qt is called for.

This recipe seems to be missing a liquid ingredient. Following the recipe as published makes a paste that is too thick to use, I added about a cup of milk to thin it to a thick batter consistency.
