I love being able to share easy vegetable side dishes for the holidays or any day of the year. We all have so much on our plate right now that anytime we can share a recipe that doesn't take hours to prepare I love it.
Life has been hectic, busy, and all the things and then you throw in holiday prep and it can feel like a lot.
This broccoli cheese casserole is the perfect side dish to pair with chicken and rice for a family dinner.
If you have guests that are not a fan of green bean casserole this is a great option for changing things up.
Ingredients Needed
This is a quick overview of the simple ingredients that you'll need to make an epic Broccoli Casserole! Specific measurements and step-by-step instructions are included in the printable recipe card at the bottom of the post.
- Frozen Broccoli Florets
- Cream of Mushroom Soup
- Sour Cream
- Sharp Cheddar Cheese
- French-Fried Onions
- Salt and Black Pepper
Broccoli - We use frozen broccoli since it is easy to keep on hand. If you are using fresh broccoli florets make sure to steam it before using it in the recipe.
French Fried Onions - If you are not a fan of French Fried Onions you can switch them out for crumbled Ritz Crackers or Seasoned Bread Crumbs.
Shredded Cheese - We like sharp cheddar cheese for the flavor but you can use any shredded cheese.
Cream of Mushroom Soup - This can be replaced with cream of chicken if you want to add meat to the recipe. You can use homemade or store-bought soup.
Optionalย Customizations
If you are looking to change this from a vegetable side dish to a full dinner meal. Here are a few of our favorite variations.
Rice - Add in a cup of cooked rice before baking to add more to this casserole.
Cauliflower - This recipe can be made with a mix of cauliflower and broccoli or you can substitute cauliflower for broccoli.
Chicken - Add in a ยฝ cup to a cup of diced or shredded chicken.
Turkey - Use leftover diced turkey to make this a great meal!
Garlic Powder - Sprinkle in your favorite seasoning to add a bit of extra flavor.
Crackers - If you are switching out the French Fried onions for Ritz crackers or similar you will need melted butter to stir into the crushed crackers.

8x8 Baking Dish - Also known as a 2-quart baking dish or casserole dish. We like to use a deep baking dish to hold all of the broccoli and cream sauce.
Heat resistant potholdersย - A couple of years ago, we had a fire scare when we didn't realize we had turned a burner on, and a cloth potholder caught fire. Thankfully we walked by the kitchen and saw the smoke and were able to get it out ourselves. Since then, we have only used these heat-resistant potholders.
How to make Broccoli Casserole
I've included complete instructions in the printable recipe card at the bottom of the post, but here's a quick version.
Don't forget to preheat the oven.
Step 1 - Cook sour cream, cream of mushroom soup, cheddar cheese, and a portion of French fried onions in a sautรฉ or frying pan over medium heat.
Cook frozen broccoli, drain, and set to the side.
Step 2 - Stir together until headed through.
Step 3 - Stir in broccoli florets until well coated.
We mix everything in our large sautรฉ pan but you can also pour it into a mixing bowl and stir it together to make this epic cheesy broccoli casserole.
Step 4- Pour the mixture into the baking dish and evenly spread broccoli mixture into the greased casserole dish. Bake in the preheated oven
Step 5 - Spread additional cheddar cheese and French fried onions over the top of the creamy Broccoli Casserole. Bake
Preparation and Storage
Make Ahead โ You can prep this broccoli casserole ahead of time and store it in the refrigerator. Just make sure it is covered until you are ready to bake it.
Storage/leftovers โ Store leftover broccoli casserole in an airtight container in the fridge. Reheat in the microwave or in the oven.
Freezing/How to freeze โ Allow the casserole to cool completely before storing in a freezer safe container. Label with the date and store for up to 3 months.
How to reheat โ The casserole can be reheated in the oven or in the microwave.

If the broccoli starts to get to dark in the oven create a tent with aluminum foil over the top of the baking dish.
This recipe can easily be doubled for larger groups. You will need 2 baking dishes or a 9x13 casserole dish if you double the recipe.

Broccoli Casserole Recipe
Ingredients
- 32 Ounce frozen broccoli
- 10.75 Ounce Cream of Mushroom Soup
- 8 Ounce Sour Cream 1 cup
- 8 Ounce Sharp cheddar cheese Shredded
- 6 Ounce French's French Fried Onions
Instructions
- Preheat oven to 325 degrees
- Combine cream of mushroom soup, sour cream, 1 cup of shredded cheese, and 1 cup of French Fried Onions in a pan over medium heat. Stir together until heated through and well mixed.
- Cook frozen broccoli according to package instructions, drain and set to the side until cream of mushroom soup is heated through.
- Mix broccoli into the cream of mushroom soup mixture until well coated.
- Pour broccoli mixture into a greased baking dish. Bake uncovered for 20-25 minutes.
- Remove from oven, cover with remaining shredded cheese and French fried onions. Bake an additional 10-15 minutes until cheese is melted.
