Years ago, when I worked a corporate job, one of my favorite after-work events was driving 30 minutes to the closest Chili's location for their chips and salsa. My friend Quenta and I would plan monthly nights out and go through many Chili's chips and salsa bowls!
This Chili's Salsa Copycat Recipe is one of my favorite snacks. I love making a big bowl and relaxing outside, soaking up the great weather with a giant bowl of chips and a Watermelon Margarita.
We had been home for weeks without going out when we published this recipe. I decided to answer the craving, make a big batch of Chili's Salsa again, and share the recipe with everyone.
I paired the Chili's Salsa copycat recipe with homemade cheese enchiladas and Mexican rice for dinner. It was so delicious!!!!ย
Make sure to plan for a couple of hours of chilling so the flavors can blend together.

- Rotel Diced Tomatoes and Green Chilies (Your choice of heat level)

How to Make CopyCat Chiliโs Salsa
I've included complete instructions in the printable recipe card at the bottom of the post, but here's a quick version.
- Add jalapeรฑos and onions to the blender and pulse for a few seconds.
- Add diced tomatoes, Rotel, garlic, cilantro, salt, sugar, and lime juice to the blender. Pulse.
- Pour into a covered bowl and chill in the refrigerator for at least 2 hours.ย
Preparation and Storage
Make Ahead: We let this copycat Chiliโs Salsa chill in the refrigerator for at least two hours to let the flavors meld together. Make sure to store it in a covered container. A mason jar works great! You can shake it right before serving.ย
Storage: Always store your salsa in an airtight container to keep it fresh and delicious for as long as possible. We photographed ours in a 4-cup Pyrex glass container.
We love to make a big batch of homemade salsa to enjoy with breakfast on eggs, lunch, or dinner. This copycat salsa is truly one of our favorite things to have in the fridge.
Freezing/How to Freeze: Salsa is one of those foods that freezes surprisingly well! Salsa stored in an airtight, freezer-safe container will remain good in your freezer for up to four months. Thicker salsas freeze best and taste fresher than their looser counterparts when thawed.
How to Reheat: For the best texture, let frozen salsa thaw overnight in the fridge or on your countertop until room temperature.

Substitutions: While this recipe calls for diced tomatoes, you can also use whole tomatoes if that is what you have.

Sugar-Free: The written recipe contains 2 grams of sugar, making it a low-sugar dish. Replace the white sugar with your go-to sugar alternative to make it sugar-free.

- I used our blender to make this fresh salsa recipe. You can also use a food processor or bullet blender, depending on what you have available.
- Make sure you pulse the blender/food processor. You want to have chunks of tomato and not fall into the puree-to-liquid range.

- 14.5 oz RO-TEL Diced Tomatoes & Green Chilies
- 14.5 oz Diced Tomatoes with juice
- 1 Tablespoon Diced Jalapeno canned
- ยผ cup yellow onion diced
- 1 teaspoon Garlic minced
- ยฝ teaspoon Salt
- ยฝ tsp Cumin
- ยผ teaspoon White Sugar
- 1 Tablespoon Lime Juice fresh
- 1 Tablespoon Cilantro fresh, chopped
Instructions
- Add Jalapenos and Onions to the blender and pulse for a few seconds
