Easy Broccoli Cheese Soup made in the Crock Pot! This easy soup tastes great and is the perfect comfort food.
Crock Pot Broccoli Cheese Soup Recipe
We talked a bit ago about how I have been making meals for John's Grandmother. This week I brought her this Crock Pot Broccoli Cheese Soup and she loved it.
We love cooking for our loved ones and try to work in veggies as much as possible into hearty, nutritious meals they will love. This soup just seems perfect for fall! Hot, cheesy, yummy goodness that is easy to make.
One thing about this CrockPot soup is that your house smells like broccoli while cooking. Not a big deal if you like broccoli but just something to be aware of.
I walked back into the house after running to the store, and the smell hit me as soon as I opened the door. I had to laugh because our house smelled like broccoli and pumpkin since I had been baking all day when I made this.
It was an exciting scent combination and a small price to pay for how fantastic the recipes turned out.
There is nothing like a bowl of hot soup on a cold night. Especially one that takes so little prep time.

Recipe Variations
Substitutions: We use cubed Velveeta for the unique flavor and color it imparts on the soup, but you can swap this for another similar cheese if you prefer to stick to non-processed ingredients.
You can also use frozen broccoli if you donโt have fresh broccoli.
Cheese - You can use any type of shredded cheese. Sharp Cheddar Cheese tastes great.
Vegetarian Option: Our CrockPot Broccoli Cheese Soup is vegetarian if you replace the chicken broth with vegetable broth.
Vegan Option: In addition to the guidance for vegetarians, vegans will want to replace the evaporated milk, butter, Velveeta, cheddar, and Parmesan cheese with plant-based substitutes.
Gluten-Free: The ingredients in this recipe typically donโt contain gluten. However, check each label if you are highly sensitive.
Alcohol-Free Option: We donโt use alcohol in our soup. However, add beer to your batch to make Broccoli Beer Cheese Soup!
Smaller Serving Size + Larger Group/More Servings: The written recipe makes six servings. Scale it up or down to your desired yield, keeping in mind that you may need to work in batches if you scale up.
Make it Spicy: Cayenne, smoked paprika, and hot sauce are fantastic additions for a spicier version of this soup.
Sugar-Free: This recipe contains 11 grams of sugar per serving. The components of this recipe donโt typically have a large amount of sugar, so use ingredients with the lowest sugar content possible if this is a dietary concern.
