Crockpot Sweet Potato Stew Recipe
I love sweet potatoes! I like them baked, broiled, and made into fries. Today I decided to make a Crockpot Sweet Potato Stew Recipe! I figured why not make them into soup in the crock pot.
YUM! This slow cooker stew recipe is so filling and delicious! Plus you all know how much I love easy crockpot recipes. I am still on a soup kick right now. There is just something about winter weather as I dream of Spring that makes me want a hot bowl of soup. Did you see the Crock-Pot Broccoli and Cheese recipe we shared a few months ago? YUM! YUM! YUM!
We are focused on eating more veggies, so I figure adding them to soups works perfectly.
Ingredients
- Onion
- Celery
- sweet potato
- Vegetable broth
- Half and half
- Black pepper
- Parsley
optional - add in 2 slices of cooked bacon, crumbled
If you want a smoother soup/stew you can easily use an immersion blender when this soup is done cooking to blend out the sweet potato and celery chunks.

Crockpot Sweet Potato Stew
Ingredients
- 1 Cup chopped onion
- 1 Cup Celery chopped
- 1 Cup sweet potato grated
- 1 Cup vegetable broth
- 1 Cup half and half
- Black Pepper
- ยฝ Cup minced parsley
- optional - add in 2 slices of cooked bacon crumpled
Instructions
- Add onion, celery, sweet potato, vegetable broth, in the crock pot, cover and cook on low for 6 hours
- Turn crock pot to high and add in ยฝ and ยฝ, cook uncovered for 30 minutes
- Season with black pepper, stir in parsley
