Easy Cheese Enchiladas Recipe
These cheese enchiladas taste just like your favorite Mexican Restaurant and you don't have to leave the house for them! Total win!
I am going to fully admit that cheese enchiladas are one of my top 5 comfort foods. If I am having a bad day or want something beyond delicious for dinner this is one of my go-to recipes.
Mexican food is always a great idea! We pair these easy cheese enchiladas with Chili's salsa, refried beans, and Spanish Rice and of course a margarita or two. You can't go wrong with a mango margarita, watermelon margarita, or beergarita.
Our local Mexican Restaurant knows my order when we get there. For years I have always ordered 2 cheese enchiladas all rice and no beans. They don't even ask anymore they just smile at me and say we got you. LOL!
I used to think that making Enchiladas at home would take a ton of time and energy. The first time I made these cheese enchiladas at home I was shocked at how quickly they came together and how great they tasted.
My husband loved that we had one of our favorite meals at home and didn't have to leave the house.
Ingredients
- Red Enchilada Sauce
- Tortillas
- Cheddar Cheese
Cheese - You can use any type of cheese that you love or a mix of cheeses. Popular cheese options include Monterey Jack Cheese, Colby Jack Cheese, or a pre-made Mexican blend of cheeses. If you can shred your own cheese it will melt better than pre-shredded. Pre-shredded cheese has a coating to keep it from sticking which can make it harder to melt.
Tortillas - We make our enchiladas with flour tortillas. You can adapt this recipe to using corn tortillas.
Enchilada Sauce - I would like to say that I make homemade enchilada sauce but I must admit that most of the time I use a can of red enchilada sauce from the grocery store.
Optional Toppings - sour cream, guacamole, tomatoes, jalapenos, shredded chicken, green onions, diced onions, hot sauce, and so on.
Can I add meat to cheese enchiladas?
Of course! I like to think of these easy cheese enchiladas as the perfect base for customization. You can add Crockpot Taco Meat, grilled chicken, chipotle shredded beef, rotisserie chicken, or steak. Whatever makes you happy!
Just add the meat when you place the cheese on the tortillas and roll it up.

How to make Cheese Enchiladas at Home
Step 1 - Add a couple of spoonfuls of enchilada sauce to the bottom of the baking dish.
Dip each tortilla in enchilada sauce so they are fully coated. This makes them easier to roll and really flavorful.
Step 2 - Add in all the cheesy goodness! About a ยผ to a ยฝ cup of cheese depending on how cheesy you want them. Add cheese and roll until you fill the baking dish.
Step 3 - Roll the tortillas carefully with the cheese inside and place in the baking dish seam side down.
Step 4 - Pour the remaining enchilada sauce over the top of the tortillas and cheese once the baking dish is full.
Step 5 - Top with cheese and bake at 350 degrees for 20-25 minutes until the cheese is bubbling.
Serve directly from the baking dish and enjoy!

Easy Cheese Enchiladas Recipe
Ingredients
- 28 Ounce Red Enchilada Sauce
- 3 cups Cheddar Cheese
- 6 Flour Tortilla
Instructions
- Preheat oven to 350 degrees
- Spread a thin layer of Enchilada Sauce in the bottom of the baking dish.
- Coat each tortilla in enchilada sauce, add in a ยผ-1/2 cup of cheese and roll. Place seam side down in baking dish.
- Pour remaining sauce over the enchiladas. Top with remaining cheese
- Bake uncovered for 20-25 minutes
