Pancake Muffins Recipe
My husband's grandmother LOVES pancakes. She would eat Denny's Pancakes every day if she had the opportunity. She is currently 93 and her eyesight is starting to go quickly. Eating full-size pancakes with a fork is not as easy as it used to be for her.
I have been making weekly meal kits for my husband's mom and grandmother to try and relieve some stress during this past year of crazy. These Pancake Muffins are the perfect easy breakfast/snack for them. They can eat them at room temperature or heat them up in the microwave quickly.
These homemade pancake muffins are super easy to make and taste fantastic. They are always a big hit when we make them.

Ingredients
- Pancake Mix
- Eggs
- Milk
Toppings - maple syrup, strawberries, chocolate chips, bacon, cinnamon sugar, blueberries, Nutella, peanut butter, sausage and cheese, or any other toppings that sound good.
Vanilla - If you like a sweeter pancake I like to add a bit of vanilla to the mix. This sweetens up the base pancake muffin if you decide to enjoy them plain.
Maple Syrup - If you LOVE maple syrup on your pancakes I highly suggest adding ยฝ cup of maple syrup to the batter before baking the pancake mix muffins. This will ensure you get the maple syrup flavor in your muffins.
Pancake Mix - We use Bisquick pancake mix since we normally always have it in the pantry. You could easily use Kodiak Pancake Mix, Krusteaz, or any other pancake mixes.
Equipment Needed
Mixing Bowl
Wooden spoon/spatula
Muffin Pan
Cooking Spray - non-stick cooking spray will make it easy to remove these pancake mix muffins.
Muffin Pan - You can use a mini muffin tin or regular muffin pan depending on the size of pancake muffins you want to make. You will need to adjust the baking time based on the size of the muffin tin being used.
Silicone Muffin molds - You can also make these in muffin liners just make sure to watch the baking time so they don't overcook.
Recipe Tips
You can make these with any pancake recipe. A few of our favorite pancake recipes include Cracker Barrel Pancakes, Funfetti Pancakes, gluten-free pancakes, or any of your favorite recipes.
Don't forget to preheat the oven to 350 degrees
You can mix together your pancake batter and then add in different toppings and flavors. These can easily be made plain or you can add in additional flavors.
Gluten-free pancake mix can be used to make these baked pancake muffins.
Make sure to spray your muffin tin with nonstick cooking spray or use muffin liners.
You can check to make sure these pancake mix muffins are done by inserting a toothpick and making sure it comes out clean.
For a fun family activity, you can set up a pancake toppings bar and let everyone create their own perfect pancake muffins.
How to freeze Pancake Muffins
One thing I love about these easy muffins is you can freeze them and have them ready when you need them. All you need to do is once they are out of the oven allow them to cool completely. Then portion them into a freezer safe container, add a label and the date and you are ready to put them in the freezer.
When you are ready to enjoy your Pancake Mix Muffins just let them thaw in the refrigerator and reheat in the microwave or stove before serving.

Ingredients
- 4 Cups Pancake Mix
- 1 ยพ Cups Milk
- 4 Eggs
- ยฝ Cup maple syrup optional
Instructions
- Preheat oven to 350 degrees
- Combine all ingredients and mixed together. Scoop into a non-stick sprayed muffin tin. Add on toppings or mix them into the pancake mixture.
- Bake for 14 minutes
