Easy Watermelon Salad Recipe {Video}

Easy refreshing Watermelon Salad is the perfect party salad or dinner salad any time of the year! A couple of ingredients and you have a delicious Watermelon Salad Recipe!

 

Watermelon Salad

I was inspired to make this after attending a meeting in Yosemite National Park. We have been working with Visit Yosemite Madera County this year and we were so excited to attend a quarterly meeting in Yosemite to learn more about what is coming up for the park.

During lunch, the catering service brought in an amazing watermelon salad and I just knew I needed to make it when we were home. You guys this recipe is so dang easy and looks like you spent so much time putting it together.

All it takes is 3 ingredients! Yes, only 3!!!!!

All you need is a watermelon, my favorite balsamic glaze, and some Pecorino Romano Cheese...that is it!

This recipe uses the same balsamic glaze we use in our easy Caprese Salad Recipe. I love keeping the glaze on hand to pour over salads, pizzas, grilled cheese sandwiches and more. Honestly, it is so good I could happily pour it on almost anything. I am hooked on it.

This summer is flying by so quickly! I can't believe it is already the second week of August. I am trying to wrap my brain around the idea that we are going to be diving into pumpkin recipes soon and all things Fall.

I am trying to delay this as long as possible and keep making dinner outside on the barbecue and savoring all the delicious summer fruit options.

We paired this watermelon salad with these delicious crock pot barbecue ribs and a potato salad. I loved that I didn't heat the house up with the stove and the crockpot did all the big cooking for the ribs.

Such an easy perfect summer dinner to enjoy at home!

Watermelon

Pecorino Romano Cheese

Balsamic Glaze 

How to make a Watermelon Salad

Cut Watermelon into cubes

Shave Pecorino Romano Cheese and sprinkle over the top

Pour Balsamic Glaze over the top of the salad

Serve

If you want to get a bit fancier you can serve this with watermelon balls or create a design with the balsamic glaze over the top of the salad.

This watermelon salad you can easily customize by look and how much you want to make. It can be sized down to a small bowl for a snack or a huge platter for a dinner party.
