Mississippi Mud Cake Recipe
This cake did not last long in our house. Our good friend who lives next door came over and we all sat down and enjoyed this cake. Oh my gosh so rich, chocolatey, and sooooo good!
Cake Ingredients
- Butter
- Cocoa
- Eggs
- Vanilla extract
- Sugar
- All-purpose flour
- Salt
Chocolate Frosting Ingredients
- Confectioners sugar
- Cocoa
- Butter
- Milk
- Vanilla extract
- Mini-marshmallows
Recipe Tips
If you need to save time or don't want to make the cake from scratch you can easily make a boxed chocolate cake mix and then add the marshmallows and icing over the top.
If you are like me and when you melt butter it implodes all over your microwave check out these silicone covers. I just bought them and they are saving me from having to deep clean the microwave all the time.
When making this Mississippi Mud Cake you want to plan in time for it to cool down to room temperature and the icing to solidify on the top.

Mississippi Mud Cake Recipe
Ingredients
Cake Ingredients
- 1 cup Butter cut into big chunks
- ยฝ cup Cocoa Powder
- 4 Eggs beaten well
- 1 Teaspoon Vanilla Extract
- 2 cups White Sugar
- 1 ยฝ cups All Purpose Flour
- โ Teaspoon Salt
Icing Ingredients
- 16 oz Confectioners Powdered Sugar about 3 โ cups
- ยฝ cup Cocoa Powder
- ยฝ cup Butter melted
- ยฝ cup Milk
- 1 Teaspoon Vanilla Extract
- 4 cups Mini Marshmallows
Instructions
Directions for Mississippi Mud Cake
- Preheat oven to 350 degrees
- Combine butter and cocoa in a medium saucepan over medium heat, stirring occasionally until butter melts
- Stir in beaten eggs, vanilla, sugar, flour, salt and beat with a spoon until well combined and smooth
- Pour into cake pan and bake for 20-25 minutes
Directions for the frosting
- Combine confectioner sugar and cocoa in a bowl, stir well. Add in melted butter, milk and vanilla and mix on low until well combined
- Once the Cake is out of the oven spread mini-marshmallows along the top of the cake, return to the oven for 3 minutes to soften the marshmallows
- Pour frosting over the marshmallows and allow the cake to cool to room temp.
