You all know we love sharing homemade comfort food recipes! The recipes that make you smile, that warm you from the inside, and that is passed down within the family. I feel like today's recipe is one of my new favorite comfort foods. It has a bit of a kick to spice it up from our usual mac and cheese but not so much kick that I am feeling it for the rest of the night. Crock Pot Mexican Mac and Cheese Recipe
Plus as it is getting colder and the weather is turning way too quickly I love how warm and filling this recipe is. Our area is already dropping down into the low 30's in the morning and we keep waking up to fog and grey weather.
Can I just say I am already ready for spring weather and it is only November?ย This may become a problem or I may need to hop a flight over to the islands and warm up soon.
I digress as I start thinking about warm tropical breezes, a fruity cocktail like this Miami Vice Cocktail, and sand between my toes...

Ingredients neededย
- Rotini pasta
- Evaporated milk
- American cheese
- Sharp cheddar
- Diced green chili peppers
- Chili powder
- Tomatoes
- Green onions

Slow Cooker Crock Pot Mexican Mac and Cheese Recipe
Ingredients
- 2 ยฝ cups rotini pasta
- 12 oz Evaporated Milk
- 8 oz American cheese cubed
- 4 oz Sharp cheddar cheese shredded
- 4 oz Diced Green Chili Peppers drained
- 2 Teaspoon Chili Powder
- 2 tomatoes seeded and chopped
- 5 green onions sliced
Instructions
- Cook rotini for 8 minutes, drain
- Add rotini, evaporated milk, cheese, chili, chili powder to the crock pot, Stir together
- Cook on high for 2 hours, stir
- Add in tomatoes, green onions and stir
- Cook for 5-10 more minutes
