Instructions
Toss potatoes in oil, thyme, and pepper in a large bowl. Wrap slice of bacon around the potato tightly
Heat a large skillet over medium heat, add potatoes, reduce heat to medium-low. Cook until light brown and bacon has tightened around the potato.
Place in crock pot and pour in chicken broth, cook on high for 3 hours.
