Instructions
Season chicken breast with salt and pepper
Place chicken in the slow cooker, along with onion, full can of tomatoes (do not rinse), corn, beans, and mushrooms. Mix well
Add the garlic, chili powder, cumin, cayenne, and more salt and pepper
Mix in the tomato paste, combining it well with the rest of the ingredients.
Cook on low for 5 – 6 hours.
Upon serving, dollop some sour cream on top and Enjoy!
Optional: Adding some shredded cheddar cheese as a garnish at the end along with the sour cream.
