Instructions
Preheat oven to 350 degrees
Cream together butter, sugar, egg, and vanilla with a mixer
Add in pumpkin and mix well
In a separate bowl, stir together flour, salt, baking powder, baking soda and spices
Combine dry ingredients with wet ingredients in the mixer
Add white chocolate chips and stir until combined
Line baking sheet with parchment paper or use a silicone mat
Bake cookies for 15 – 18 minutes until they are just beginning to brown
